🥐 Puff Pastry Wrapped Salmon with Leeks and Spinach
There are few dishes that feel as elegant yet effortless as salmon wrapped in puff pastry. This recipe came together quickly, with simple ingredients, but the result was a juicy, flavorful fish with a beautiful texture and presentation.
The Process
  • Step 1: Sauté the leeks   I started by gently sautéing sliced leeks in butter until they softened and released their sweet aroma.
  • Step 2: Prepare the salmon   A fresh salmon fillet was seasoned simply with salt and pepper. I spread the buttery leeks over the top, then wrapped the fillet snugly in puff pastry.
  • Step 3: Bake to perfection   The parcel went into the oven at 390°F for 20 minutes. The pastry puffed up golden and crisp, locking in all the juices of the salmon.
  • Step 4: Create a spinach-garlic pillow   While the salmon baked, I sautéed fresh spinach with garlic. This became a soft, fragrant “pillow” to serve beneath the baked salmon, adding depth, color, and a touch of earthiness to the dish.
The Result
The combination of flaky pastry, tender salmon, sweet leeks, and garlicky spinach was delightful. It’s a recipe that looks impressive but is surprisingly quick and easy to prepare. Perfect for a weeknight dinner when you want something special, or for guests when you’d like to serve a dish that feels restaurant-worthy without the fuss.
